In about a week, a frozen yogurt shop will open in Austin if all goes well.

The Sassy Strawberry is set to open sometime next week if everything goes according to plan, according to owner and manager Ashley Kuper. Kuper said a state inspector will tour the store on Monday, Nov. 25, and the store could open as soon as Wednesday, with a grand opening to take place about a week or two after that.

“Oh my gosh, it’s such a relief,” Kuper said.

The frozen yogurt shop was announced in March of this year to open at a new strip mall at 803 18th Ave. NW, but construction delayed the Sassy Strawberry and fellow business Jimmy John’s from opening until the fall.

Sassy Strawberry will feature 18 different flavors — including sherbet and sugar free yogurt — and 80 toppings, from fruit and nuts to cereal and candy. Customers can mix and match the yogurt and toppings and pay by the ounce after they’ve made their creation.

Kuper said the store will be open from 11 a.m. to 9 p.m. Monday through Thursday, 11 a.m. to 10 p.m. Friday and Saturday, and noon to 9 p.m. Sunday.

Sassy Strawberry will occupy 2,000-square feet and will seat about 40. It will also serve water, soda and coffee. This is one of three stores Kuper and her husband, Reed, plan to open, with the other two located in Iowa.

The Kupers plan to hire 12 to 15 employees to work mostly part time.
