Jimmy John’s and a self-service frozen yogurt shop are slated to open by September in a new Austin strip mall.

Jimmy John’s owner Pat McCauley, who has five other locations in the region, said he hopes to open in less than six weeks.

“It should be fun,” he said. “We’ve gotten really good feedback.”

McCauley said they will deliver within a five-minute drive of the location, at 803 18th Ave. NW, and will be open from 10:30 or 11 a.m. to about 10 p.m. each day.

McCauley hopes to hire about 30 to 40 part-time and full-time employees.

The yogurt shop, the Sassy Strawberry, will feature 18 different flavors — including sherbet and sugar free yogurt — and 80 toppings, from fruit and nuts to cereal and candy. Customers can mix and match the yogurt and toppings and pay by the ounce after they’ve made their creation.

The shop is at 803 18th Ave. NW, Suite No. 1 and will have about 10 to 12 employees.

“Everyone seems very excited about it,” said owner and manager Ashley Kuper. “I think it will be really good for Austin.”

Kuper hopes to open soon after Sept. 1.

The building, which houses Double K Specialty Inc. and the Veterinary Medical Hospital, is under construction. The vet clinic will move to the south side of the building, and Double K will move to 2206 and 2208 Fourth St. NW in Mapleview, closing in Austin on July 28 and re-opening in Mapleview on July 30.
