Munch Snack Lab coming soon to Austin

Eighteenth Avenue Northwest will soon be welcoming a new snack shop to the area.
Munch Snack Lab, a new concept by 1910 Fresh Mexican Kitchen co-owner Israel Gonzales, will be occupying the space formerly occupied by Discount Mattress, next to Total Fitness Gym and Jimmy John’s. The projected opening date is Sept. 10.
“There are a few factors involved (with choosing that location),” Gonzales said. “It’s obviously more exposure. We’re trying to be in the same town, but not too close to (1910), even though it’s going to be a different concept. We want to get ourselves out there closer to the action and get people from other towns and those going to Hy-Vee and Walmart.”
As for the food, Gonzales said it is not another 1910. Patrons can expect homemade ice cream and shaved ice, as well as some healthier options, such as fruit bowls natural juices, smoothies and fruit bars. It will be centered around the concept of “build your own.”
“There will be over 50 ice cream toppings,” Gonzales said. “There is going to be a dry side and a cold side, so you can get a variety of fresh natural toppings. “
With the exception of some topping items, Gonzales said he hopes to keep everything fresh.
But, while common toppings will be available, the Munch Snack Lab will be about experimenting. Gonzales said they plan to have “crazy bowls,” where the limit to what toppings you choose is your imagination. Toppings for “crazy bowls” will include hot sauce, hot Cheetos and cucumbers.
“There are a lot of options,” he said. “That’s why we call it a snack lab; you can pair whatever you want.”
Gonzales also said the interior will be beach themed.
“We’re trying to get the nice weather in the middle of winter, or at least make it feel like it,” he said with a laugh.
The state has already given Gonzales approval. Now he is waiting for other licenses and permits so he can open as soon as possible.
In time, Gonzales hopes to put in a kitchen and expand the menu, though the larger menu is still in the experimental phase.
Despite the cold Minnesota winters, Gonzales said the Munch Snack Lab will be open year round.
“Hopefully it will be fun and people will like it,” he said.
