Katherine Mae Eischens

Katherine Mae Eischens, 80, of Taopi, Minnesota, died Wednesday, April 19, 2017, at Wildwood Grove Assisted Living in LeRoy, Minnesota.

Katherine was born Sept. 6, 1936, in Farmington, Minnesota, the daughter of Marvin and Margaret (Tutewohl) Pietsch. Katherine graduated from high school in Farmington, and married Harold E. Eischens on Feb. 16, 1955, at St. Michaels Catholic Church in Farmington. They made their home in Taopi where Katherine raised her family and later worked as a bartender at the Rusty Rail and Chief Taopi Bar. Harold and Katherine worked with the Prairie Visions Cooperative in the Adams, LeRoy, Rose Creek and Taopi areas for a number of years.

Katherine loved to cook for her family. She was an avid reader and card player and enjoyed music of all types. She loved dogs and enjoyed playing pool, participating in several tournaments.

Katherine is survived by her children: Gwen (Al) Swenson, Adams, Minnesota, Charlene (Charlie) Jax, Bloomington, Minnesota, Keith Eischens, Taopi, Craig “Butch” (Nancy) Eischens, Dodge Center, Minnesota, Steve (Janice) Eischens, Taopi, Lynn Eischens, Brownsdale, Minnesota, and Peggy Nagele, Dexter, Minnesota; daughter-in-law: Kari Boe, Taopi; 20 grandchildren; 26 great grandchildren; brothers,  David (Karen) Pietsch, Farmington, and Richard (Kathy) Pietsch, Farmington; sisters, Donna (Norman) Swenson, Northfield, Minnesota, and Marilyn (Stan) Overby, Lakeville, Minnesota; brothers-in-law, Ambrose Eischens and Walter Eischens; sister-in-law: Ann Eischens; and many nieces and nephews.

She was preceded in death by her parents; husband, Harold; son, Terry; daughter-in-law, Gina; and great grandson, Weston.

Funeral services will be held at 11 a.m. on Monday, April 24 at the Adams Funeral Home with the Rev. Jan Wiersma officiating. A private interment will be at Woodlawn Cemetery in Taopi. Visitation will be from 3 to 6 p.m. Sunday at the Adams Funeral Home and on Monday for one hour before the service.
