Minn. boy’s sandwich recipe a national finalist

MANKATO, Minn. (AP) — A Mankato first-grader who created a peanut-butter sandwich that features blueberries and maple syrup is one of five finalists in a national sandwich contest.
Sullivan Jacobs calls his concoction the Blue Monkey Pita. It features whole-wheat pita bread, blueberries, agave nectar, banana, maple syrup and peanut butter.
The sandwich was good enough to qualify him as one of five finalists in the “Most Creative Peanut Butter Sandwich Contest,” sponsored by Jif.
A Free Press of Mankato report says Sullivan is now in the running for a $25,000 college fund and $10,000 for education products. The grand-prize winner will be announced March 30 in New York.
Sullivan says he came up with the recipe one morning when he wanted French toast but his 4-year-old brother wanted peanut butter and bananas.
