A 28,000-square foot expansion project is humming along at Hormel Foods Corp.

James Mino, director of engineering at Hormel, said they are in the process of pouring basement walls. Mino expects the foundation work will continue through August. After that, he said, the structure will begin to take shape.

Hormel broke ground on June 13 and Mino said they expect to wrap up everything in January 2012.

The expansion, the first for Hormel in more than 20 years, includes new conference room space, an auditorium for large group meetings, an exercise room, a cafeteria and food service area, and additional parking. The majority of the expansion, 20,500 square feet, will take place on the first level where the main entrance sits, and the remainder will be a basement level, which will house building services, air conditioning and heating, ventilation and electrical gear.

McGough Construction of St. Paul is the general contractor.

Hormel officials would not comment on the cost of the project.
