Baby bok choy featured at the Farmer’s Market

Featured this week at the market is baby bok choy. Also known as Chinese white cabbage, it is frequently found in wonton soup and in many stir-fry dishes in Japanese and Chinese restaurants. It is mildly flavored with a tender sweetness. One of the health benefits associated with consuming Bok Choy is its ability to aid in healthy digestion. It is a low fat, low calorie green and is high in Vitamin A, Vitamin C, Beta-Carotene, and Calcium.

You will also find fresh strawberries, lettuce, spinach, rhubarb, jam, radishes, bread, honey, pickles, eggs, chicken and beef at the Market this week. Don’t forget all the wonderful crafts available as well.

Baby Bok Choy with Sweet Chili Sauce and Garlic

Sweet chili sauce, garlic and ginger provide simple adornments for the tender bok choy leaves and stems. Serve with steamed rice for soaking up the sauce.

• 3 tablespoons vegetable oil.

• 2 garlic cloves, finely chopped

• 1 1/2-inch piece ginger, peeled and finely chopped

• 5 heads baby bok choy, bottoms trimmed, outer leaves discarded, separated into leaves and thoroughly washed

• 6 tablespoons sweet chili sauce

Salt and pepper

1. Heat a large sauté pan over medium-high heat. Add vegetable oil, garlic and ginger. Cook until fragrant but not brown, about two minutes, stirring frequently.

2. Add bok choy leaves and cook until leaves are wilted but stems are still crunchy, stirring occasionally, about 5 minutes. Add sweet chili sauce, stir and let cook for another 2 to 3 minutes, tossing to coat all leaves. Taste and adjust seasoning with salt and pepper. Serve immediately and spoon leftover sauce in pan over bok choy.

The market is open Mondays from 3:30 to 5:30 p.m. at the Oak Park Mall, Thursdays from 3:30 to 6 p.m., First Street NE, just east of the Mower County Justice Center, and Saturdays from 9:30 to 11:30 a.m. at Oak Park Mall.
