Plenty of tastes at the Farmers’ Market

Rain or shine, the Austin Farmers Market is well under way. This week you will find fresh radishes, green onions, asparagus, rhubarb, baked goods, honey and farm fresh eggs, chicken and beef. Visit us and bring the kids this Saturday, May 28, at the Oak Park Mall at 10 a.m. for special guest Jim Jayes, magician and puppeteer. There will be coffee and refreshments available.

Recipe of the Week:

Rhubarb Strawberry Ice Pops

1/4 c. sugar

3 c. rhubarb

3 T. water

1 carton strawberry yogurt

1/2 c. unsweetened applesauce

1/4 c. finely chopped strawberries

What you do:

In a saucepan, bring rhubarb, sugar and water to a boil. Reduce heat, simmer uncovered for 10 to 15 minutes or until blended, thick and cool. Combine 3/4 c. rhubarb mixture, yogurt, applesauce and strawberries. Fill molds with 1/4 c. mixture, insert wooden stick and freeze.

The Market runs Mondays from 3:30 to 5:30 p.m. at the Oak Park Mall, Thursdays from 3:30 to 6 p.m. downtown, First Street NE, just east of the courthouse, and Saturdays from 9:30 to 11:30 a.m. at Oak Park Mall.
