VIDEO: Let them eat cake

Riverland Community College hosted a “Big Night On Campus” Thursday, from 5:30 to 8 p.m. at the West Building on the Austin Campus. “Big Night On Campus” is an annual college-wide event for all ages open to everyone in the community. A special feature this year was the creation of the Second Biggest Cake in Minnesota.

Riverland and Hy-Vee in Austin partnered to bake the giant cake for “Big Night On Campus.” Proceeds from cake sponsorships and sales raised money to create an endowed scholarship fund for Riverland students. All donations will be doubled as every dollar raised, up to $10,000, will be matched by an anonymous donor.

According to the Midwest Baking Association, the largest cake in Minnesota was commissioned by the Minnesota Lottery and created by Grandma’s Bakery. The cake served more than 90,000.

Students, employees, local celebrities and other volunteers will frost the cake.
